PARTY FAVORS – PARTY FAVORS! A few weeks ago my cousin had a Birthday Party for her one year old son and made cookies in a jar for party favors. They turned out so cute I thought I would share the idea with you. ENJOY!

Cookies in a Jar

•Buy Clear Jars (you can find these at Walmart) and add the following ingredients.

1 1/3 cup all purpose flour, spooned into measuring cup & leveled
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup cooking oats
3/4 cup m&ms
3/4 cup semi-sweet chocolate chips
1/2 cup brown sugar, packed
1/2 cup white sugar

• Add a tag to the jar with the following information so your guest will know how to make their cookies:

•Mix the dry ingredients in the jar with the following:

1 slightly beaten egg
1/2 cup butter (melted slightly in the microwave)
1 teaspoon vanilla

•Roll the cookie dough into 1 1/2 inch balls

•Bake for about 10 minutes in a preheated 350 degree oven.

Basketball. My family LOVES basketball. As a matter of fact, we are moving in two weeks and the biggest concern is getting the TV set up in time for March Madness. My husband is very excited about his Missouri Tigers going deep in the tournament. So at least we know our priority for the move.

This has been an amazing season of basketball in our household. Our son Preston eats, sleeps and breathes basketball. Everyday he can’t wait to get home from school to practice his fadeaway jump shot (thanks Dirk Nowitzki). Our daughter Madison played on her first basketball team, and I must say: the girl was a force to be reckoned with!

A few weeks ago Preston had the game of his life. He had scored 13 of his team’s 20 points, and they were down by one with 9 seconds left. After a mad scramble for the ball, he got it, launched a shot and banked it in with 3 seconds lef to win the game. It was an amazing moment – as a mom I could not have been more proud. To top it off, it was his birthday!

This past weekend a similar scenario played out again for Preston. However it was a very different outcome. Preston’s team was in the second round of their tournament – the winner would go to the championship game. With 3 seconds left and the scored tied, Preston took a shot and once again the crowd went crazy . . . but this time it was the other team going crazy. He missed the shot, and we ended up losing the game by two in overtime. After the game Preston’s demeanor was much different than a couple of weeks ago. Instead of elated rejoicing now I saw Preson completely heartbroken.

Losing is never easy and especially after you’ve hit a game-winning shot a few weeks before. As a parent I ached for Preston knowing how hard this loss was for him and his team. He felt like he had let the team down.

But in a strange way I was a little thankful because isn’t this life? Life is full of highs and lows and learning how to deal with disappointment is a great way to build character. Life’s disappointments provide an open door to teach our children. I just pray I take advantage of every moment.

All the same, I would rather have won.

When I had my daughter Madison one of my best friends brought me this dish. I remember when she brought it over she said this is the perfect “comfort food” to have after having a baby and boy was she right. Anything made with whipping cream has to be labeled comfort food right?!? I love to serve up this dish in the winter and because it does fall under “comfort food” at my house I only make it a few times a year. I think it is safe to say my family LOVES it – ENJOY!

Chicken Queso

4 Chicken Breast (cooked)

1 Onion

1 lb Velveeta

1 Can Rotel

1 Pint Whipping Cream

2 TBSP Butter

•Saute – onion and rotel

•Microwave – cheese and whipping cream until melted

•Mix in Chicken to the above ingredients

•Serve with Chips

With the big game next weekend I thought this would be a great recipe to share with you. A few weeks ago my college roommate shared a queso recipe with me that she loves. I actually was at her house this past Friday night and tasted this queso and it was oh so yummy. As you make your plans for next weekends big game this might be something you want to add to your menu. ENJOY!

Mamaw’s Queso
1/4 cup oleo
1/2 cup chopped celery
1/2 cup green pepper
1/4 cup onion
cook till soften then add 1/4 cup flour, 1/2 teaspoon salt and 1 cup milk.
add 1 1/2 cups cubed cheese and can rotel.

Last week I had buttermilk that was about to expire, a few old bananas and voila! It was the perfect combination for Banana Bread! There is nothing I enjoy more than warm Banana Bread with a dab of butter – yum, yum, yum! There are several recipes that I have used for banana bread through the years. I really like this one the most because it is always so moist! ENJOY!

Banana Bread

3 med. bananas, mashed
2 eggs
1/2 c. butter
1 tsp. vanilla
1/4 cup buttermilk
1 1/2 cup flour
1 cup sugar
3/4 tsp. baking powder
3/4 tsp. baking soda
1/8 tsp. salt

Mix well bananas, eggs, butter, vanilla and buttermilk. Combine flour, sugar, baking powder, baking soda and salt. Add flour mix to banana mixture. Mix for 1 minute. Pour batter into greased and floured loaf pan. Bake at 350º for 35 minutes or until toothpick comes out clean.

Hot out of the oven, now all you need is a dab of butter!

A few years ago when my sister in law was visiting she made Thai Chicken Wraps for dinner. It has become a favorite dinner at our house. I love that it is different and is really easy and quick to prepare. WARNING: the peanut sauce is VERY addicting as we like to say, we could drink the sauce it is so yummy! ENJOY!

Thai Chicken Wraps

•Serves 6•

6• 8-10 inch plain, tomato or spinach flour tortillas

1/2 tsp. garlic salt

1 TBS cooling oil

1/2 tsp. pepper

12 ounces skinless, boneless chicken breast strips for stir-frying

4 cups packaged shredded broccoli (broccoli slaw mix)

1 med. red onion, cut into thin wedges

1 tsp. grated fresh ginger

1 recipe of peanut sauce

•Wrap tortillas in paper towels. Microwave 100% power for 30 seconds

•Meanwhile, in a medium bowl combine garlic salt and pepper. Add chicken, toss to coat evenly. In a large skillet cook and stir seasoned chicken in hot oil over medium heat for 2 to 3 minutes or until no longer pink. Remove from skillet and keep warm. Add the broccoli, onion and ginger to skillet. Cook and stir for 2 to 3 minutes or until vegetables are crisp-tender.

•To assemble, spread each tortilla with about 1 tablespoon peanut sauce. Top with chicken strips and vegetable mixture. Roll up each tortilla. Serve wraps immediately with remaining sauce.

PEANUT SAUCE:

•In a small saucepan combine 1/4 cup sugar, 1/4 cup creamy peanut butter, 2 TBSP soy sauce, 3 TBSP water, 2 TBSP cooking oil, and 1 tsp. minced garlic. Heat and stir until sugar is dissolved. Makes about 2/3 cup
